How to Make Karivepaku Podi at Home

Karivepaku Podi, also known as Curry Leaf Powder, is a beloved spice blend in South Indian cuisine. Its aromatic and flavorful profile adds a unique touch to various dishes. Ingredients Needed

  • 1 cup Karivepaku (Curry Leaves)
  • 2 tablespoons Chana Dal (Bengal Gram)
  • 2 tablespoons Urad Dal (Black Gram)
  • 6-8 dried Red Chilies
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Coriander Seeds
  • 1 teaspoon Black Peppercorns
  • 1 tablespoon Sesame Seeds
  • A pinch of Asafoetida (Hing)
  • Salt to taste
  • 1 teaspoon Oil

Optional Ingredients

  • 1 tablespoon grated Dry Coconut

Preparation Steps

  1. Clean and Dry the Curry Leaves: Wash the curry leaves thoroughly and pat them dry with a clean cloth. Spread them out on a plate to air dry completely.
  2. Roast the Ingredients: Heat a teaspoon of oil in a pan. Add Chana Dal, Urad Dal, and dried red chilies. Roast until the dals turn golden brown and the chilies become crisp. Remove and set aside.
  3. Roast Curry Leaves: In the same pan, add the dried curry leaves. Roast on low flame until they turn crisp. Be careful not to burn them.
  4. Roast Spices: Add cumin seeds, coriander seeds, black peppercorns, and sesame seeds to the pan. Roast until fragrant. Add a pinch of asafoetida and mix well.
  5. Cool the Ingredients: Allow all the roasted ingredients to cool down to room temperature.
  6. Grind to a Powder: Using a blender or spice grinder, grind the roasted ingredients along with salt to a fine powder. If using dry coconut and jaggery, add them at this stage and grind again.
  7. Store the Podi: Transfer the Karivepaku Podi to an airtight container. Store it in a cool, dry place.
