This crispy rava dosa recipe is a quick South Indian breakfast for busy mornings. Unlike traditional dosa, the batter does not need fermentation. The batter should be thin and the pan hot so the dosa develops its signature lacy, crisp texture.

Recipe at a Glance

  • Prep: 10 minutes
  • Rest: 15 minutes
  • Cook: 20 minutes
  • Serves: 3–4

Ingredients

  • 1 cup fine semolina (rava/sooji)
  • ½ cup rice flour
  • ¼ cup plain yoghurt (optional)
  • 2½–3 cups water, as needed
  • 1 small green chilli, finely chopped
  • 1 tsp grated ginger
  • 1 tbsp chopped coriander
  • 1 tsp cumin seeds
  • 1 small onion, finely chopped (optional)
  • Salt to taste
  • Oil for cooking

How to Make Rava Dosa

  1. Mix semolina, rice flour, yoghurt if using, salt, cumin, chilli, ginger and coriander.
  2. Whisk in water gradually until the batter is very thin and pourable. Rest for 15 minutes, then add a little more water if it thickens.
  3. Heat a well-seasoned tawa over medium-high heat and lightly grease it.
  4. Stir the batter before each dosa. Pour it from the outside towards the centre rather than spreading it like regular dosa.
  5. Drizzle a little oil around the edges and cook until golden and crisp. Flip briefly if needed.
  6. Serve hot and repeat, stirring the batter each time.

Tips for Crispy Rava Dosa

  • Keep the batter thinner than regular dosa batter.
  • Make sure the tawa is hot, but reduce the heat if the dosa browns too quickly.
  • Do not spread the batter with a ladle; the small holes help make it lacy.
  • If the dosa sticks, allow it to brown longer before lifting.

What to Serve with Rava Dosa

Serve with coconut chutney, tomato chutney or sambar. For a fuller breakfast, add a small bowl of sambar and fresh fruit.

Storage

Rava dosa is best eaten fresh while crisp. Keep leftover batter covered in the refrigerator and use within a day; stir and adjust with water before cooking.

Frequently Asked Questions

Does rava dosa batter need fermentation?

No. This is an instant-style batter, so it only needs a short rest to hydrate the semolina.

Why is my rava dosa soft?

The batter may be too thick, the pan may not be hot enough, or the dosa may need more cooking time.
