  • Cook: 5 minutes if corn needs heating
  • Serves: 2

Ingredients

  • 2 cups cooked sweet corn kernels
  • ¼ cup finely chopped onion
  • ¼ cup finely chopped tomato, seeds removed if watery
  • 1 small green chilli, finely chopped (optional)
  • 1–2 tbsp chopped coriander
  • 1–2 tbsp lemon juice, to taste
  • ½ tsp chaat masala, or to taste
  • ¼ tsp roasted cumin powder
  • Salt and black pepper, to taste

How to Make Sweet Corn Chaat

  1. If using frozen corn, cook according to the packet directions and drain well. If using fresh corn, boil until tender and remove the kernels.
  2. Place the warm corn in a mixing bowl.
  3. Add onion, tomato, green chilli and coriander.
  4. Sprinkle in chaat masala, roasted cumin, salt and pepper.
  5. Add lemon juice and toss well. Taste and adjust the seasoning.
  6. Serve immediately while fresh.

Variations

  • Add chopped cucumber for extra crunch.
  • Mix in boiled chickpeas for a more filling snack.
  • Add a spoonful of plain yoghurt for a creamy version.
  • For a smoky flavour, briefly char cooked corn in a hot pan before mixing.

Helpful Tips

Drain the corn well so the chaat does not become watery. Add the tomato and lemon close to serving time for the freshest texture. Chaat masala varies by brand, so add it gradually and taste as you go.

Storage

This chaat is best eaten freshly mixed. If preparing ahead, refrigerate cooked corn separately and add the chopped vegetables and seasoning just before serving. Do not leave cooked corn at room temperature for long periods.
