Ingredients
For Masala Paste:
- 2 tbsp oil
- 2 tbsp butter
- 5 cloves
- 2 pods cardamom
- 2 onions, sliced
- 2 cloves garlic
- 1-inch ginger
- 3 tomatoes, sliced
- 15 cashews
For Curry:
- 2 tbsp oil
- 2 tbsp butter
- 1 bay leaf
- 1 chili
- 1 onion, finely chopped
- ½ tsp turmeric
- 1 tsp chili powder
- ¾ tsp coriander powder
- ¼ tsp cumin powder
- ½ tsp garam masala
- 1 tsp salt
- 1 cup water
- 2 tbsp cream
- 16 cubes paneer
- 1 tsp kasuri methi
- 2 tbsp coriander, finely chopped
Instructions
Making the Gravy Base:
- Heat 2 tbsp oil and 2 tbsp butter in a large kadai.
- Add 5 cloves and 2 pods of cardamom. Sauté on low flame until aromatic.
- Add 2 sliced onions, 2 cloves of garlic, and 1-inch ginger. Sauté until the onions shrink slightly.
- Add 3 sliced tomatoes and 15 cashews. Sauté for 2 minutes.
- Cover and boil for 10 minutes, or until the tomatoes soften.
- Let it cool completely, then blend to a smooth paste.
- Pass the paste through a filter to remove seeds and skin. Set the smooth paste aside.
Making Paneer Butter Masala:
- Heat 2 tbsp oil and 2 tbsp butter in a large kadai. Add 1 bay leaf and 1 chili. Sauté until the spices are aromatic.
- Add 1 finely chopped onion. Sauté until golden brown.
- On low flame, add ½ tsp turmeric, 1 tsp chili powder, ¾ tsp coriander powder, ¼ tsp cumin powder, ½ tsp garam masala, and 1 tsp salt. Sauté until aromatic. Be careful not to burn the spices.
- Add the prepared onion-tomato paste. Mix well.
- Cook until the oil separates from the masala paste.
- Add 1 cup water and mix well to adjust the consistency.
- Add 2 tbsp cream and mix well.
- Gently add 16 cubes of paneer and mix.
- Simmer for 5 minutes, or until the paneer absorbs the flavors.
- Add 1 tsp kasuri methi and 2 tbsp finely chopped coriander. Mix well.
