How to make Andhra chicken curry
- Season the chicken: Mix chicken with turmeric, a little salt and half the ginger-garlic paste. Set aside for 10–15 minutes while you prepare the vegetables.
- Cook the onions: Heat oil in a heavy pan over medium heat. Add curry leaves and onions. Cook, stirring often, until the onions are golden and softened.
- Add ginger and garlic: Stir in the remaining ginger-garlic paste and cook for about a minute, until fragrant.
- Make the masala: Add chopped tomatoes, chilli powder, coriander powder and cumin powder. Cook until the tomatoes soften and the mixture thickens.
- Cook the chicken: Add the chicken and stir to coat each piece in the masala. Cook for 4–5 minutes, turning the pieces.
- Simmer: Add enough water to make your preferred gravy. Cover and simmer gently for 20–30 minutes, stirring occasionally, until the chicken is fully cooked. Cooking time depends on the size and cut of the pieces.
- Finish and serve: Stir in garam masala, taste and adjust salt. Garnish with coriander leaves and serve hot.
Tips for a flavourful curry
- Cook the onions until golden; this helps build the gravy’s flavour.
- Let the tomatoes cook down before adding water so the masala is not raw or watery.
- Start with less chilli powder and add more next time if you prefer a hotter curry.
- For a thicker gravy, simmer uncovered for a few extra minutes once the chicken is cooked.
- For a pressure cooker, follow your cooker’s instructions and use a suitable amount of liquid; check that the chicken is fully cooked before serving.

Frequently asked questions
How can I make Andhra chicken curry less spicy?
Use 1/2 teaspoon chilli powder or less, then adjust to taste. You can also serve it with plain rice or raita to balance the heat.
Can I make this curry ahead of time?
Yes. Cool and refrigerate it promptly. Reheat thoroughly before serving; the flavours may deepen after resting overnight.
How do I know the chicken is cooked?
The thickest pieces should reach an internal temperature of 74°C (165°F), measured with a food thermometer.
Can I use boneless chicken?
Yes. Boneless pieces may cook faster, so begin checking for doneness earlier and avoid overcooking.
