Andhra chicken fry is a bold, spicy dish made with chicken, chilli, warming spices and curry leaves. This home-style version marinates the chicken first, then cooks it until tender before frying the masala until it clings to every piece. Serve it as a side with rice, rasam, dal or chapati.

Recipe at a glance

Serves 3–4 | Prep: 15 minutes, plus marinating | Cook: 25–30 minutes | Spice level: medium-hot

Ingredients

  • 600 g boneless chicken, cut into bite-size pieces
  • 3 tablespoons plain yoghurt
  • 1 tablespoon ginger-garlic paste
  • 1–2 teaspoons red chilli powder, to taste
  • ½ teaspoon turmeric
  • 1 teaspoon coriander powder
  • ½ teaspoon cumin powder
  • ½ teaspoon garam masala
  • 1 tablespoon lemon juice
  • 2 tablespoons oil, plus a little more if needed
  • 1 small onion, finely sliced (optional)
  • 2 green chillies, slit
  • 1 sprig curry leaves
  • Salt, to taste
  • Chopped coriander and lemon wedges, to serve

How to make Andhra chicken fry

1. Marinate the chicken

Mix yoghurt, ginger-garlic paste, chilli powder, turmeric, coriander, cumin, garam masala, lemon juice and salt. Coat the chicken well. Marinate for at least 30 minutes in the refrigerator, or up to 4 hours for deeper flavour.

2. Cook until tender

Heat 1 tablespoon oil in a heavy pan. Add the chicken and its marinade. Cook over medium heat, stirring regularly, until the chicken is cooked through and the liquid has mostly reduced. Add a splash of water if the pan becomes dry before the chicken is tender.

3. Fry the masala

In the same pan, push the chicken aside and add the remaining oil. Add sliced onion if using, green chillies and curry leaves. Fry until fragrant, then toss everything together. Continue cooking for a few minutes until the masala is thick and lightly crisp around the edges. Avoid burning the spices.

4. Check and serve

Make sure the thickest pieces reach an internal temperature of 74°C (165°F). Finish with coriander and a squeeze of lemon. Serve hot.

Tips for restaurant-style flavour

  • Do not overcrowd the pan; cook in batches if needed.
  • For a deeper red colour, use Kashmiri chilli powder and add hot chilli powder only to your preferred heat level.
  • Let the marinade reduce before increasing the heat to fry the masala.
  • Fresh curry leaves added near the end give a classic aroma.

What to serve with Andhra chicken fry

Serve with steamed rice, lemon rice, rasam or chapati. For another creamy curry option, try our chicken tikka masala recipe.

Storage and reheating

Refrigerate leftovers in a sealed container within 2 hours and use within 3 days. Reheat until steaming hot throughout. For best texture, reheat in a pan rather than adding lots of water.

Frequently asked questions

Can I use bone-in chicken?

Yes, but it will take longer to cook. Check that the meat near the bone is fully cooked and reaches a safe internal temperature.

Can I make it less spicy?

Reduce the chilli powder and omit the green chillies. Keep the ginger, garlic, coriander and curry leaves for flavour.
