  • 2 garlic cloves, finely chopped
  • 1/2 teaspoon salt, or to taste
  • 100–150 ml water, as needed
  • 2 tablespoons chopped fresh coriander
  • 1/2 teaspoon amchur powder or 1 teaspoon lemon juice, optional

How to make Indian pumpkin curry

1. Prepare the pumpkin

Peel the pumpkin or squash, remove the seeds and cut it into similar-sized cubes. Keeping the pieces similar in size helps them cook evenly without turning the whole curry mushy.

2. Temper the spices

Heat the oil in a wide pan over medium heat. Add cumin seeds and let them sizzle for a few seconds. Add the chopped onion and cook for 4–5 minutes until softened. Stir in ginger and garlic and cook for another minute.

3. Cook the masala

Add the tomatoes, turmeric, coriander powder, chilli powder and salt. Cook for 5–6 minutes, stirring occasionally, until the tomatoes soften and the mixture becomes thick and aromatic.

4. Add the pumpkin

Add the pumpkin cubes and stir well so they are coated with the masala. Pour in 100 ml water, cover the pan and cook on low to medium heat for 12–15 minutes. Stir gently once or twice and add a little more water if needed.

5. Finish the curry

When the pumpkin is tender but still holds its shape, sprinkle in garam masala. Add amchur powder for a lightly tangy finish, or use fresh lemon juice after switching off the heat. Garnish with coriander and serve hot.
