How to make paneer butter masala

1. Prepare the gravy base

Heat the oil and half the butter in a pan. Add chopped onions and cook until soft. Stir in ginger-garlic paste and cook for about a minute. Add tomatoes, cashews, chilli powder, turmeric and ground coriander. Cook until the tomatoes soften and the mixture thickens.

2. Blend until smooth

Allow the mixture to cool slightly, then blend to a smooth paste. Add a little water if needed, taking care when blending hot ingredients.

3. Cook the sauce

In the same pan, heat the remaining butter and add cumin seeds. Pour in the blended gravy and simmer gently for 8–10 minutes, stirring regularly. Add water gradually until the sauce reaches your preferred consistency.

4. Add paneer

Add paneer cubes and garam masala. Simmer gently for 4–5 minutes so the paneer warms through without breaking apart.
