Ingredients

  • 1 cup sabudana (tapioca pearls)
  • 1/2 cup roasted peanuts, coarsely crushed
  • 1 medium boiled potato, diced
  • 1–2 green chillies, finely chopped
  • 1 teaspoon cumin seeds
  • 1–2 tablespoons ghee or oil
  • Salt or fasting-approved rock salt, to taste
  • 1 tablespoon fresh lemon juice
  • Fresh coriander, optional

How to make sabudana khichdi

1. Soak the sabudana

Rinse the sabudana several times until the water is mostly clear. Add just enough water to reach the level of the pearls, then soak for about 4–6 hours or until they press easily between your fingers. Drain thoroughly.

2. Prepare the peanut mixture

Crush roasted peanuts coarsely. Mix them with the drained sabudana and suitable salt. This helps keep the pearls separate and adds flavour.

3. Temper the spices

Heat ghee or oil in a wide pan. Add cumin seeds and let them sizzle. Add green chilli and diced boiled potato and cook for a few minutes.

4. Cook the khichdi

Add the sabudana mixture and gently toss. Cook over medium-low heat, stirring occasionally, until the pearls turn translucent and are cooked through. Avoid adding extra water.

5. Finish

Turn off the heat and add lemon juice. Garnish with coriander if it is permitted for your fasting tradition. Serve warm.
