Ingredients for Masala Paste:

  • 2 tsp oil
  • 1 inch cinnamon
  • 4 cloves
  • ½ tsp pepper
  • ½ onion, sliced
  • 10 cloves garlic
  • 2 inch ginger
  • 5 green chilies
  • 1 cup mint leaves
  • 1 cup fresh coriander
  • ½ cup fenugreek leaves
  • ½ tsp salt
  • ½ cup water

Ingredients for Biryani:

  • 2 tbsp oil
  • 2 tbsp ghee
  • 1 inch cinnamon
  • 3 cardamom pods
  • 3 cloves
  • ½ tsp pepper
  • 1 tsp cumin seeds
  • 1 onion, sliced
  • 1 potato, cubed
  • 1 carrot, chopped
  • 5 beans, chopped
  • ¼ tsp turmeric powder
  • ½ tsp chili powder
  • 1 tsp biryani masala
  • ½ tsp salt
  • ¾ cup yogurt (curd)
  • 2 cups water
  • 1 cup seeraga samba rice, soaked for 20 minutes
  • ½ lemon

Instructions:

  1. Heat 2 tsp oil in a pan. Add cinnamon, cloves, and pepper. Sauté until aromatic.
  2. Add sliced onion, garlic, ginger, and green chilies. Sauté until onions are lightly browned.
  3. Add mint leaves, coriander, fenugreek leaves, and salt. Sauté until fragrant.
  4. Cool and grind into a smooth paste with ½ cup water. Set aside.
  5. In a large kadai, heat 2 tbsp oil and 2 tbsp ghee. Add cinnamon, cardamom, cloves, pepper, and cumin seeds. Sauté until aromatic.
  6. Add sliced onion and sauté until golden brown.
  7. Add the prepared masala paste and cook for 2 minutes to remove raw flavors.
  8. Add potato, carrot, beans, turmeric powder, chili powder, biryani masala, and salt. Sauté until well combined.
  9. Reduce heat, add yogurt, and mix well.
  10. Add 2 cups water, soaked rice, lemon juice, and mix gently.
  11. Cover and simmer for 20 minutes until rice is cooked.
  12. Let it rest for 30 minutes before serving hot with raita.
