Delicious Kadai Chicken Recipe

Kadai Chicken is a traditional North Indian dish where chicken is cooked in a spicy and rich gravy made with cashew nuts and various spices. Perfect to pair with chapati or rice, Kadai Chicken is a favourite in many Indian households and restaurants.

Masala Ingredients

  • 2 cardamons
  • 2 cloves
  • 2 cinnamon sticks
  • 8 cashew nuts
  • 1 teaspoon poppy seeds
  • 1 teaspoon cumin seeds
  • 2 teaspoons coriander seeds
  • 1/4 cup water

Preparation Ingredients

  • 1/2 kg boneless chicken, cut into small pieces
  • 2 onions, cut into big pieces
  • 1 green bell pepper/capsicum
  • 1 tomato, cut into pieces
  • 1 teaspoon crushed ginger and garlic
  • 3 stalks coriander leaves, chopped for garnish
  • 4 tablespoons oil
  • 1 teaspoon salt, or as needed
  • 3 teaspoons red chilli powder
  • 1/4 teaspoon turmeric powder
  • 1 green chilli, slit open

Kadai Chicken Recipe Instructions

  1. Grind all the items from Ingredients-1 into a smooth paste and keep it aside.
  2. Heat oil in a kadai (using an iron one gives better taste). Add onions, green chilli, and crushed ginger and garlic. Cook until they turn golden brown.
  3. Add the chopped tomato and cook until it becomes soft.
  4. Add the chicken, turmeric powder, red chili powder, the masala paste, and salt. Cook everything until the masala coats the chicken and the oil separates.
  5. Add the chopped green bell pepper and cook for a couple of minutes.
  6. Garnish with chopped coriander leaves.
  7. Serve hot with chapati or rice.
