Step-by-Step Instructions

  1. Boil and cube: Boil potatoes until just tender, cool them, peel and cut into bite-size cubes. Avoid overcooking so they keep their shape.
  2. Temper the cumin: Heat oil in a wide pan over medium heat. Add cumin seeds and let them sizzle for 20–30 seconds without burning.
  3. Add chilli: Stir in green chilli if using and cook briefly.
  4. Season: Add turmeric, coriander powder and chilli powder. Stir for a few seconds; add a teaspoon of water if the spices begin to stick.
  5. Add potatoes: Add the cubed potatoes and salt. Toss gently so the spice mixture coats them.
  6. Brown: Cook uncovered for 6–8 minutes, turning occasionally. Let some edges turn golden before stirring again.
  7. Finish: Turn off the heat. Add coriander and lemon juice, taste and adjust seasoning, then serve warm.
