  • 1 tsp coriander powder
  • 1 tsp garam masala
  • A handful of curry leaves
  • Salt to taste

Instructions:

  1. Prepare the Mutton: Wash the mutton pieces thoroughly. Marinate with a pinch of turmeric, salt, and a little ginger-garlic paste. Let it sit for 30 minutes.
  2. Saute the Spices: Heat oil in a heavy-bottomed pan. Add mustard seeds and let them splutter. Then add cumin seeds and curry leaves. Fry for a minute.
  3. Cook the Onions: Add finely chopped onions to the pan. Sauté until they turn golden brown.
  4. Add Aromatics: Mix in the ginger-garlic paste and green chilies. Cook for another 2-3 minutes until the raw smell disappears.
  5. Tomato Time: Pour in the tomato puree. Cook until the oil separates from the masala, stirring occasionally.
  6. Spice it Up: Sprinkle turmeric powder, red chili powder, and coriander powder. Stir well to combine the spices with the onion-tomato mixture.
  7. Introduce the Mutton: Add the marinated mutton pieces to the pan. Stir to coat the mutton with the masala. Cook for 5-7 minutes on medium heat.
  8. Simmer: Pour in the coconut milk and add some water to cover the mutton. Season with salt. Cover the pan and let it simmer on low heat for 45-60 minutes until the mutton is tender.
  9. Finish Up: Once the mutton is cooked, sprinkle garam masala on top. Mix well and simmer for another 5 minutes.
  10. Garnish and Serve: Garnish with freshly chopped coriander leaves. Serve hot with steamed rice, dosa, or naan.
