Andhra Mirchi Bajji is a popular spicy snack from the Indian state of Andhra Pradesh. These deep-fried green chilli fritters are stuffed with a flavorful mixture and coated in a seasoned batter. Perfect for tea time, they can be enjoyed hot with a sprinkle of chopped onions, coriander, and a squeeze of lemon juice.

Ingredients:

For the stuffing:

  • 5 Long Chilli / Bajji milagai
  • Oil (for deep frying)
  • 1/2 cup Fried gram dal or roasted peanuts
  • 1.5 tsp Red chilli powder
  • 1/2 tsp Ajwain
  • 1/4 tsp Cumin powder
  • 1/8 tsp Hing (Asafoetida)
  • 1/2 tsp Chat masala powder
  • Salt and water (as needed)

For the bajji batter:

  • 1 cup Besan flour (Gram flour)
  • 1/3 cup Rice flour
  • 1/8 tsp Cooking soda / Baking soda
  • 1 tsp Red chilli powder
  • 3 pinches Hing (Asafoetida)
  • 1/2 tsp Ajwain
  • Salt and water (as needed)

Method – How to Make Andhra Mirchi Bajji:

  • Prepare the stuffing:  
  • Grind all the stuffing ingredients into a paste. Adjust the red chilli powder as per your taste.
  • Prepare the chillies:
  • Wash and cut the chillies vertically. Remove seeds as per your spice preference.
  • Stuff the chillies:
  • Fill the chillies with the prepared paste and set them aside.
  • Make the batter:
  • In a bowl, mix besan flour, rice flour, baking soda, salt, and water to make a thick paste. Gradually add water to achieve dosa batter consistency. The batter should coat the chillies well.
  • Fry the bajjis:
  • Heat oil for deep frying. Test the oil by dropping a small amount of batter into it; it should rise immediately. Reduce the heat, dip the stuffed chillies in the batter, and fry them until golden brown and crispy.
  • Cook until golden brown:
  • Deep fry the chillies on both sides until golden brown and crispy. Serve hot with tea or coffee.
  • Garnish and serve:
  • Finely chop onions and coriander leaves, sprinkle some salt, and add lemon juice. Mix well and sprinkle over the bajjis. Optionally, serve with tomato sauce for kids.

Tips:

  • Ensure the batter is thick enough to coat the chillies properly. If too thin, add more besan and rice flour.
  • Ajwain in the batter aids digestion, so don’t skip it. If unavailable, use cumin seeds as a substitute.
