Poha is a quick, comforting Indian breakfast made with flattened rice, onions, green chilli, curry leaves and peanuts. This easy recipe turns soft, fluffy poha into a tasty meal with a little lemon and fresh coriander.

Ingredients
- 2 cups thick poha (flattened rice)
- 1 small onion, finely chopped
- 1 small green chilli, chopped
- 2 tbsp peanuts
- ½ tsp mustard seeds
- ½ tsp cumin seeds (optional)
- 8–10 curry leaves
- ¼ tsp turmeric powder
- 1–2 tbsp oil
- Salt, to taste
- ½ tsp sugar (optional)
- ½ lemon, juiced
- 2 tbsp chopped coriander
- 2 tbsp peas or finely chopped carrot (optional)
How to Make Poha
1. Rinse the poha
Place the poha in a sieve and rinse briefly under running water. Let it drain for 5 minutes until softened but not mushy. Gently separate the flakes with a fork. Mix in a little salt and the optional sugar.
2. Fry the peanuts and tempering
Heat oil in a pan. Add the peanuts and fry until lightly golden, then remove and keep aside. Add mustard seeds and let them splutter. Add cumin, curry leaves and green chilli.
3. Cook the onion
Add the chopped onion and cook until soft. Stir in the turmeric and optional peas or carrot. Cook until the vegetables are just tender, adding a splash of water if needed.
4. Add poha and finish
Add the softened poha and fried peanuts. Toss gently until everything is evenly mixed. Cover and cook on low heat for 2–3 minutes. Turn off the heat, add lemon juice and coriander, and fluff gently with a fork.
Tips for Soft, Fluffy Poha
- Use thick or medium-thick poha; very thin poha can become mushy.
- Rinse quickly and drain well instead of soaking for a long time.
- If the poha feels dry, sprinkle a teaspoon or two of water before covering the pan.
- Add lemon juice after switching off the heat for a fresh flavour.
What to Serve with Poha
Serve warm with chai, extra lemon wedges, or a little sev sprinkled on top. Add fruit or yoghurt on the side for a more filling breakfast.

Why did my poha turn mushy?
It may have been rinsed or soaked for too long. Rinse briefly, drain thoroughly and let it rest for a few minutes before cooking.
Can I make poha without peanuts?
Yes. Skip the peanuts or replace them with cashews if suitable. The recipe will still be flavourful.
