Published on:

Andhra bendakaya fry is a simple okra stir-fry with a lightly crisp texture and warming spices. The key is to wash and dry the okra thoroughly before cutting it; excess moisture can make it sticky. Serve it with rice, dal and a little pickle for a comforting everyday meal.

Recipe details

  • Prep: 15 minutes
  • Cook: 15–20 minutes
  • Serves: 3–4 as a side

Ingredients

  • 400 g fresh okra (bendakaya)
  • 1 small onion, thinly sliced (optional)
  • 2 tbsp oil
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 1–2 green chillies, slit
  • ¼ tsp turmeric
  • ½–1 tsp red chilli powder, to taste
  • 1 tsp coriander powder
  • Salt to taste
  • 1–2 tbsp chopped coriander (optional)

Instructions

  1. Wash and dry: Rinse the okra, then dry it completely with a clean tea towel. Trim the ends and slice into 1–2 cm pieces.
  2. Temper: Heat oil in a wide pan over medium heat. Add mustard seeds and let them pop, then add cumin and green chilli.
  3. Cook onion: If using onion, add it and cook for 3–4 minutes until softened.
  4. Fry the okra: Add the sliced okra and turmeric. Stir gently, then cook uncovered for 8–10 minutes, stirring occasionally.
  5. Season: Add salt, chilli powder and coriander powder. Continue cooking for another 5–8 minutes until the okra is tender and the sticky texture has reduced. Avoid stirring too often.
  6. Finish: Taste, adjust the seasoning and add coriander if desired. Serve hot.

Tips for less sticky okra

  • Dry the okra fully before slicing.
  • Use a wide pan so moisture can evaporate.
  • Cook uncovered and avoid adding water.
  • Wait until the okra has started cooking before stirring frequently.

What to serve with bendakaya fry

Serve with steamed rice and dal, or pair it with Andhra tomato pappu. For another quick vegetable side, see our beetroot poriyal.

Storage

Refrigerate leftovers in a covered container within 2 hours and use within 3 days. Reheat in a pan to help the okra regain some texture. The fry is usually best freshly cooked.

Frequently asked questions

Why is my bendakaya sticky?

Okra naturally contains mucilage. Drying it well, cooking uncovered and avoiding added water help reduce the sticky texture.

Can I make bendakaya fry without onion?

Yes. Skip the onion and continue with the tempering and spices.

Can I use frozen okra?

Yes, though the texture may be softer. Follow the package instructions and cook off excess moisture before seasoning.
