Ingredients
- Boiled potatoes – 2
- Oil – 4 tbsp
- Mustard seeds – 3/4 tsp
- Cumin seeds – 1/2 tsp (optional)
- Chana dal – 1 tbsp
- Curry leaves – 15
- Dry chillies – 3
- Onion – 1 cup (chopped)
- Green chillies – 3 (chopped)
- Turmeric powder – 1/2 to 3/4 tsp
- Water – 1 cup
- Salt – to taste
- Coriander leaves – few or 2 tbsp
Method :
- Boil and Mash Potatoes: Boil the potatoes and let them cool. Roughly mash them and set aside.
- Prepare the Tempering: Preheat a vessel, add oil, and when it’s warm, add mustard seeds, cumin seeds, chana dal, dry chillies, and curry leaves. Let them splutter.
- Saute Onions: Add chopped onions and fry until they turn lightly golden brown and transparent.
- Add Spices: Add turmeric powder and roast for a few seconds. Then add water and green chillies. Cook with the lid closed for 5 minutes, then simmer for another 5 minutes.
- Combine Ingredients: Ensure the mixture has enough liquid to mix with the potatoes but not too much; it should be moist. When the water is reduced by half and all ingredients are well cooked, add the mashed potatoes and salt. Mix well.
- Simmer: Close the lid and simmer for 5 to 8 minutes so the potatoes absorb all the liquid. Turn off the heat and let it rest for 5 minutes.
- Garnish and Serve: Garnish with coriander leaves and mix well. Serve Potato Curry for masala dosa, puri, chapati, or rice.
Tips :
- Blending Flavours: Adding water helps blend all the ingredients, allowing the potatoes to absorb the flavours. This method is perfect for dosa stuffing.
- No Water Option: If you prefer not to add water, after roasting the turmeric powder, add the mashed potatoes, mix well, and simmer for a few minutes before serving. This saves time.
- Adjust Consistency: If there’s too much liquid, cook the curry with the lid open so the potatoes can absorb the excess liquid.
