  2. Roasting Seeds and Spices: In the same pan, dry roast 2 tablespoons coriander seeds, 1 tablespoon cumin seeds, and 1 tablespoon caraway seeds until they become aromatic. Set these aside as well.
  3. Roasting the Rest: Now, dry roast 3 mace pieces, a 2-inch cinnamon stick, 1 whole nutmeg, 1 teaspoon cloves, 3 black cardamom pods, 3 star anise, 10 green cardamom pods, 1 tablespoon black pepper, and 1 teaspoon fennel seeds until they release their aroma.
  4. Blending: Allow all the roasted ingredients to cool completely. Once cooled, transfer them to a blender.
  5. Adding Turmeric: Add ½ teaspoon turmeric powder to the blender.
  6. Grinding: Blend all the ingredients into a fine powder.
  7. Storing: Transfer the biryani masala powder to an airtight container. Store it in a cool, dry place. Use this masala powder to prepare delicious biryani.
